What happens when you make a pizza in the style of a sweet pastry? This Galette Pizza was made with traditional pizza ingredients and the same freeform dough technique used to make a galette. Usually the word galette refers to a sweet pastry dough filled with fruit. The edges of the dough are folded over the fruit filling, creating a freeform tart. Instead of making a sweet galette, I made a savory Galette Pizza, and it’s so good you need to try it yourself.
To create my Galette Pizza, I folded the edges of the dough over and towards the center. And the spot where the dough gets folded over – it’s the perfect place to hide a little ricotta. It’s almost like a stuffed crust pizza. Then I brushed the top of the dough with a bit of garlic and butter.
I used my Aunt Diddie’s Bolognese Sauce in this recipe and I loved how the meaty homemade sauce contrasted with the creamy ricotta. If you don’t happen to have homemade bolognese, you can use store-bought sauce. Since the sauce was so meaty, I didn’t add any extra meat to this pizza, but if I had used a marinara sauce instead, I would have added sausage or pepperoni.
This idea was brainstormed during tea at the Waldorf Astoria with my friends Jocelyn and Jenny. The Galette Pizza concept was their idea and I am really happy with the way it turned out! (And go check out Jocelyn and Jenny’s sites, they are two of my favorites!)

Ingredients
- one ball of Pizza Dough (I picked it up at the grocery store)
- 1 cup of
- Aunt Diddie's Bolognese Sauce
- 1 large ball of Mozzarella
- 1/2 cup of Part-Skim Ricotta
- 2 tablespoons Butter
- 2 cloves of Garlic
- Fresh Basil
Instructions
- First heat your oven to 400 degrees. Then take about 1/4 of the butter and generously butter a baking sheet. Butter the baking sheet prevents the dough from sticking, while also making the crust extra crispy.
- Next, stretch out the dough into a big thin circle, and place it on the baking sheet. Then spread the sauce over the dough, leaving an inch around the edge. Add ricotta around the edge of the crust and then fold the edge over.
- Slice or tear the mozzarella and add it over the sauce.
- Finally, crust the garlic and add it to a bowl with the remaining butter. Place it in the microwave until the butter has melted, and then use a pastry brush to brush the butter and garlic mixture over the exposed pizza crust.
- Bake the galette pizza for 25 minutes, or until the crust is golden brown and the cheese is bubbly. Serve immediately, topped with fresh basil.
