Cranberry, Goat Cheese, and Sweet Potato Bites

Remember the Cranberry Salsa recipe I shared recently? I used that salsa to make a Thanksgiving appetizer that I am obsessed with: Cranberry, Goat Cheese, and Sweet Potatoes Bites. If you are adding Cranberry Salsa to your Thanksgiving menu – go ahead and add this appetizer too, it takes just minutes to prepare and my friends loved them. I roasted one inch thick slices of sweet potato and served them warm with a small spoonful of cranberry salsa and goat cheese on top.

The tart goat cheese matches the slightly sweet, bitter, spicy cranberry salsa and the sweet potatoes wonderfully. Cranberry and sweet potato are classic fall flavors that are on theme for Thanksgiving. I chose to serve this appetizer and a caramelized butternut squash instead of traditional sweet potatoes, and my friends were into it. It is a more modern take on Thanksgiving.

You could use the concept of making sweet potato bites and add different toppings too. Goat cheese, roasted walnuts, and fried sage would be great too. Since the sweet potato is getting cut into one inch pieces, I recommend getting 1 potato for every 3 people. Three or four potatoes, a package of crumbled goat cheese, and 1/2 cup of cranberry salsa would be enough to serve 10-12 people.

If you aren’t making cranberry salsa, you could use cranberry sauce instead.

Cranberry, Goat Cheese, and Sweet Potato Bites

Ingredients

  • 3-4 Sweet Potatoes
  • 1 tablespoon Butter
  • Salt and Pepper
  • 3-4 ounces Goat Cheese
  • 1/2 cup Cranberry Salsa

Instructions

  1. Heat your oven to 350 degrees. Then peel the sweet potatoes and cut them into rounds one inch thick.
  2. Place the potatoes in a large bowl. Melt the butter, and pour it over the sweet potatoes. Sprinkle with salt and pepper and toss the potatoes in the bowl until they are evenly covered in butter.
  3. Spread the potatoes out in one layer on a baking sheet. Place in the oven to bake for 40 minutes. After 20 minutes, flip the potatoes.
  4. After 40 minutes the potatoes should be soft. Arrange the potato slices on a serving dish and top with 1/2 teaspoon of the cranberry salsa and an equal amount of goat cheese.
