You can opt to rinse and roast your carrots whole, but if you want them to cook more quickly, you might want to chop them or slice them in half. The smaller you slice the faster they will roast. You can also opt to use baby carrots instead of whole carrots. Did you know that baby carrots aren’t really “baby” at all? They are just normal carrots that go through a machine! Crazy, right?

Roasted Carrots

Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 45 minutes
Total Time: 50 minutes

Ingredients

  • 12 carrots
  • 1 1/2 tablespoons Butter
  • 1/4 teaspoon Salt
  • 1 tablespoon Honey

Instructions

Rinse the carrots, or peel the carrots. I opted to just rinse them. 

You can either keep the carrots whole, slice then in half vertically, or chop them up. If you chop the carrots they will roast more quickly.

Arrange the carrots on a parchment-lined baking sheet. The parchment helps to make sure that the carrots will cook evenly.

Melt the butter. Brush the melted butter over the carrots making sure they are completely coated with butter. Drizzle the honey and sprinkle the salt over.

Roast the carrots in an oven heated to 350 degrees. The carrots will be beautifully caramelized after 35-45 minutes of roasting.
