This Beef Taco Pie is a crowd-pleasing meal that is easy to make with just 20 minutes of active preparation time and 30 minutes of bake time.
You could also call this a Mexican Lasagna, but I like to call it a taco pie because I make it in a pie pan. The taco pie is made with layers of taco beef with onions and bell pepper, salsa, black beans, corn, tortillas, and cheese.
Feel free to make this recipe your own. If you want to add some spice, add some chopped jalapenos to the beef. Use garbanzo or kidney beans instead of black beans. You could even use chorizo instead of ground beef. Another easy way to customize this recipe is with your salsa selection. I use a medium roasted tomato salsa, but you can use any salsa that you like.
If you want to make a double batch, you can use a casserole dish instead. You might just have to cut the tortillas to fit.
I used 90% lean beef and did not drain the excess fat. If you want to drain your beef, you can, just cook the beef, drain it, and set it aside. Then saute the onion and bell pepper. Once the onion and pepper are soft you will want to return the beef to the pan and then add the taco seasoning and water. Opting not to drain the beef simplifies this process and adds extra flavor to the meal. But, I do recommend using 90% lean and not 80% lean beef if you plan to skip draining the excess fat.
The recipe calls for a can of corn, but if it is in season, I use fresh corn that I cut off the cob.

Beef Taco Pie
This Beef Taco Pie is made with layers of seasoned beef cooked with onions and bell pepper, black beans, corn, salsa, tortillas, and cheese. You can add in your favorite taco toppings to make this meal your own. The best thing - you can get this meal to the table in just about 50 minutes.
Ingredients
- 1 small White Onion
- 1 small Bell Pepper (any color)
- 2 teaspoons Olive Oil
- 1 lb Beef (I used 90% lean)
- 1 (16 oz) jar of Medium Salsa
- 3 Tortillas
- 1 1/2 cup Mexican Cheese Blend
- 1 packet Taco Seasoning
- 1/2 cup Water
- 1 (15 oz) can of Black Beans
- 1 (7 oz) can of Corn
- Optional toppings: Sliced Tomatoes, Green Onion, Sour Cream, Avocado
Instructions
Preheat the oven to 350 degrees. Dice the onion and bell pepper. Remove the black beans from the can, place in a colander, and rinse in cool water. Dillute the taco seasoning in 1/2 cup of warm water.
Heat a skillet over medium heat, add the olive oil. Once the oil is hot, add the onion. Saute for 2 minutes, then add the bell pepper and saute for another 2 minutes.
Then add the beef and the taco seasoning (which you mixed with water). Use a wooden spoon mix the beef and the seasoning and to break the beef up into small pieces as it cooks. Cook until the beef has browned. This will take about 5 minutes.
Now that the beef has cooked, it is time to assemble the taco pie.
Spoon a thin layer of salsa into the bottom of the pie pan. Add a tortilla on top. Next add a few more spoonfuls of salsa, and half of the beef mixture. Spread it out into an even layer.
Top with another tortilla. Add a couple more spoonfuls of salsa, then half of the black beans, half of the corn, and half of the cheese.
Add the last tortilla, a few spoonfuls of salsa, the remaining beef, beans, and corn. Top with the rest of salsa and cheese.
Bake the taco pie for 30 minutes at 350 degrees. Then cut the pie into slices and enjoy. You can top with sour cream and sliced avocado if you like.

This recipe is so easy and delicious! Assemble was a snap using 10 inch flour tortilla. Neighbor and I had a fabulous meal and some left over for lunch the next day.
