The classic BLT gets an upgrade with this easy recipe for BLT Wraps with Avocado and Mozzarella. This is the perfect low-fuss summertime meal. Crispy bacon gets paired with juicy tomatoes, fresh lettuce, slices of avocado, creamy fresh mozzarella cheese, and a touch of mayonnaise. It is a medley of well-loved ingredients, and a perfect way to serve ripe end-of-summer tomatoes.
When my friend was hosting a picnic in Lincoln Park, I wanted to bring one of my favorite summertime foods, the BLT. Instead of just adding bacon, lettuce, and tomato, I also added in some shredded fresh mozzarella, and some slices of avocado. And since BLTs have a tendency to fall apart, I made BLT wraps so that I could add more ingredients without worrying about the sandwiches falling apart.
I love this recipe because it is easy to make enough to serve a crowd. The only cooking involved in this recipe is cooking the bacon, which can easily be done in large batches. Once the bacon is ready, you can assemble enough wraps to feed the whole family in just 10 minutes.
The easiest way to prepare the bacon is to bake it on a sheet pan. While the bacon is cooking, chop the tomatoes, wash the lettuce, grate the mozzarella, and slice the avocado. Once the bacon has cooked, let it cool and then assemble the BLT Wraps. I like to let the bacon cool so that way it doesn’t melt the mozzarella.
I recommend making these BLT Wraps just before serving, otherwise, the juicy tomato might make the wrap and bacon soggy. And, use the largest tortillas that you can find. I like to buy the Burrito Grande size since they are just the right size to hold lots of ingredients.
I am not going to get into specific proportions in the recipe, you can make these BLT Wraps however you like – I recommend preparing 2-3 slices of bacon per wrap.
How to make BLT Wraps with Avocado and Mozzarella:
BLT Wraps with Avocado and Mozzarella
Ingredients
- Bacon
- Tomatoes
- Avocado
- Lettuce
- Fresh Mozzarella
- Mayonnaise
- Large Tortillas
Instructions
-
Begin by preparing the bacon. Line a baking sheet with aluminum foil, and lay the bacon out in a single layer. Bake at 375 degrees for about 15 minutes, until the bacon is crispy. Place the cooked bacon on paper towels and blot the excess grease.
-
While the bacon is cooking, chop the tomatoes, slice the avocado, wash the lettuce, and grate or slice the mozzarella.
-
To assemble the wraps, spread some mayonnaise in the center of a tortilla. I use about a teaspoon per tortilla. Then add 2-3 slices of bacon, some chopped tomatoes, sliced avocado, mozzarella, and lettuce. Fold the sides of the tortilla over, and then roll the wrap up. Continue making as many wraps as you like. Slice them in half and serve.
Recipe Notes
I recommend making these BLT Wraps just before serving, otherwise, the juicy tomato might make the wrap and bacon soggy. And, use the largest tortillas that you can find. I like to buy the Burrito Grande size since they are just the right size to hold lots of ingredients.
