Yesterday, during a moment of genius, I invented a Prosecco Float. I simply combined Halo Top Lemon Cake Yogurt and Prosecco. The result is a fizzy dessert cocktail that is slightly creamy with a touch of lemon flavor. It is the perfect cocktail to welcome Spring… which technically arrived yesterday even though the warm temperatures certainly haven’t made their way to Chicago yet. But trust me, this is the cocktail you will want to cool off with once warmer weather arrives.

If you aren’t familiar with Halo Top yet, let me bring you up to speed. It’s an ice cream with a cult-like following. My friend Danielle first told me about it a couple of months ago, and I am hooked. It’s a low-calorie, low-sugar, high-protein ice cream. The best part is that there are only 240 calories PER PINT. I know. It’s like the angels came down from heaven and placed this stuff in the freezer section. BTW – this post isn’t sponsored by Halo Top, I just really love it, and it is a crucial ingredient to my Prosecco Float.

So far I have only experimented with making Prosecco Floats with the Lemon Cake flavor – it’s my favorite and it has a permanent spot in my fridge – but I am sure that the Strawberry would be just as delicious. If you want to make your prosecco float a little bit fancier, you can add in some strawberry slices or strawberry puree.

Ingredients

  • Halo Top Lemon Cake Ice Cream
  • Prosecco

Instructions

  1. Place a scoop of Halo Top lemon cake ice cream in a glass. Top with a normal serving of prosecco. Drink/eat immediately.
