Broccomole

Ingredients

  • 2 Large Heads of Broccoli
  • 2 tablespoons Lemon Juice
  • ¼ cup 2% Milk
  • 2 tablespoons Mayonaisse
  • ½ cup Reduced Fat Sour Cream
  • ½ teaspoon Sriracha
  • ½ teaspoon Salt

Instructions

  • Start off by steaming the broccoli. Trim the large pieces of stem off the broccoli, breaking it up into smaller pieces. Pour 2 inches of water in a large pot, add the broccoli, cover the pot with a lid, and bring the water to a boil. Let the broccoli steam for 5-6 minutes, until it is fork tender. You want the stems to be nice and soft.
  • Let the broccoli cool, or run under cold water to cool it off.
  • Pour all the wet ingredients and salt into the blender. Add about ⅓ of the broccoli. I don't have a high powered blender, so I needed to add the broccoli gradually. Blend everything together on a medium speed. Add the remaining broccoli in two more batches, blending thoroughly.
  • Add more salt and sriracha to the broccomole to taste, blending to combine.
  • Pour into a serving dish. Serve chilled with pretzels or tortilla chips.
