Start off by steaming the broccoli. Trim the large pieces of stem off the broccoli, breaking it up into smaller pieces. Pour 2 inches of water in a large pot, add the broccoli, cover the pot with a lid, and bring the water to a boil. Let the broccoli steam for 5-6 minutes, until it is fork tender. You want the stems to be nice and soft.
Let the broccoli cool, or run under cold water to cool it off.
Pour all the wet ingredients and salt into the blender. Add about ⅓ of the broccoli. I don't have a high powered blender, so I needed to add the broccoli gradually. Blend everything together on a medium speed. Add the remaining broccoli in two more batches, blending thoroughly.
Add more salt and sriracha to the broccomole to taste, blending to combine.
Pour into a serving dish. Serve chilled with pretzels or tortilla chips.
