An Easy Appetizer for the 4th of July – Whipped Feta

Ingredients

  • 8 ounces Feta Cheese
  • cup Whipped Cream Cheese
  • 2 teaspoons Olive Oil
  • 3 tablespoons of Lemon Juice
  • a dash of Black Pepper
  • 1 cup Cherry or Grape Tomatoes

Instructions

  • Combine the feta, whipped cream cheese, olive oil, lemon juice, and black pepper in a stand mixer with the whisk attachment, or a food processor. Mix for 2-3 minutes on medium, until smooth. Stop to scrape down the sides of the bowl as necessary.
  • Chop the tomatoes. Then use spatula to spread the whipped feta onto a platter. Make a rectangle with a square missing for the chips.
  • Arrange the tomatoes to make stripes. Add corn chips and serve.
