Summer Corn and Zucchini Fritters: Turn summer produce into crispy little cakes that can be served as an appetizer or side dish. 

To make, combine shredded zucchini, fresh corn, flour, pecorino romano cheese, egg, lemon, and garlic. 

Form the fritter dough into small cakes. Lightly fry the fritters in a skillet greased with olive oil until golden.

You can eat the fritters on their own, or serve with some tzatziki or garlic aioli. It is a perfect summer treat.
