Egg and Cheese Breakfast Tarts:  these puff pastry tarts are the ultimate quick and easy yet elegant recipe.

The Process:  First, slice a thawed sheet of puff pastry into six pieces. Arrange on a parchment lined baking sheet.

The Process:  Brush each square of puff pastry with a layer of pesto. If you want, add a slice of prosciutto on top. 

The Process:  The most important step is to add asparagus around the edges. This creates a well for the egg.

Asparagus is perfect in this recipe, but you could use bell pepper slices instead. Arrange the veggies so they will hold the egg in place.

The Process:  Add some cheese and then carefully crack an egg into the well you have created. Sprinkle more cheese on top. 

The Process:  Lastly, it is time to bake the breakfast tarts. Carefully transfer to the oven and bake for 15 minutes. 

The Final Product:  After 15 minutes, the puff pastry will be fully cooked. The egg white will be solid and the yolk will be jammy.
