Remember the Prosecco Float I made earlier this year? People were pretty excited about the idea of combining Halo Top Lemon Cake Ice Cream and Prosecco, which got me thinking about other ways to mix wine and Halo Top. When I finally found the strawberry flavor at the grocery store I wanted to make a fun fruity wine cocktail, and came up with this Strawberry White Wine Cocktail.
This cocktail is light, fruity, effervescent, and slightly sweet. You can definitely taste the wine, although strawberry is the star of the show. The addition of the Halo Top Ice Cream lends a touch of creaminess. It’s like a grown up version of ginger ale and sherbet punch.
I like to use Halo Top Ice Cream because it is a bit more like of sherbet, and because it is lower in fat and calories. You could substitute a strawberry sherbet if you want a non-dairy option. If you are looking for Halo Top, it is available at Whole Foods, and it is highly addictive.
This Strawberry White Wine Cocktail with Halo Top Ice Cream would be fun to serve at a bridal shower. It’s pink and girly and a bit boozy. The fresh strawberry taste of this cocktail seems to capture the juiciness of a fresh strawberry.
