In honor of the upcoming three day weekend, I thought it would only make sense for me to share a collection of my favorite summer cocktail recipes. These cocktails are just the thing to sip on a rooftop, beach, or backyard as you savor the last warm days of the year.

Grapefruit Lime Fizz-12

Grapefruit is so refreshing, isn’t it? This Grapefruit Lime Fizz is basically a gin and tonic with freshly squeezed grapefruit and lime juices.

Strawberry White Wine Cocktail with Halo Top Ice Cream-7

This Strawberry White Wine Cocktail is made with Halo Top ice cream, which means it is part cocktail and part dessert and a perfect way to cool off on a sweltering afternoon.

Cucumber Lime Gin and Tonic

Cucumber Lime Gin and Tonics are a clever and refreshing twist on the classic cocktail. The trick to this drink is to make infused gin by letting it soak with lime rind and cucumbers, so plan ahead – that process takes a couple of hours.

Lemonade is the ultimate summertime drink, and this Raspberry Lemonade Cocktail takes it to the next level. It’s an effervescent vodka cocktail, and you can opt to serve the vodka on the side to keep things kid friendly.

Bourbon Lemonade via The Kittchen

Want a more man friendly lemonade cocktail? Try this Bourbon Lemonade. It can be made in big batches and takes just a couple of minutes to mix up.

Strawberry Peach Sparkling Rosé Sangria

Strawberry Peach Sparkling Rosé Sangria might be my favorite. It’s takes 15 minutes of extra time the night before your party, but it’s worth it. The peach, strawberry, and lemonade mixture gets soaked in vodka overnight, and then once it is party time it gets mixed with sparking rosé. It’s a light fruity summery take on sangria, and my girlfriends loved it.
