Steak and Eggs

I know it is only Tuesday (seriously?), but what a week it has been! I am feeling a little bit behind on blogging and on life in general. The reason for this is that condo hunting has been taking up a big chunk of my time. I am so happy to say that today the offer we made on a lovely new place was accepted! We are moving slightly north to Chicago’s Old Town. I promise to do my best to keep up with blogging during what I am sure will be a pretty crazy June. The fun news is that I will have a whole new neighborhood of restaurants to explore.

Even though I haven’t spent much time in the kitchen, I did make us a nice brunch on Saturday. I generously seasoned some skirt steak with salt, pepper, and oregano, and seared it in a grill pan. I fried a few eggs sunny side up. I served this with some fingerling potatoes, salsa, and black beans topped with cheddar. It was a big brunch and it kept us full for hours. There isn’t much of a recipe here, it was more a combination of several things in my fridge that was easy to assemble.

Oh and in case you are curious, the new place has a great kitchen.
