Slow Cooker Coq Au Vin


Coq Au Vin is my latest slow cooker creation. This chicken in a rich wine sauce with vegetables is a classic. This hearty meal is great on a cold winter day. I made this on a chilly day, and paired it with mashed potatoes.

I made quite a bit of this and turned some of the leftovers into a chicken stew. The wine taste of this dish intensified overnight. This dish is perfect for people who love red wine.

You do not need to use expensive wine for this dish, but follow the rule of using a wine you would drink.

You will need:

  • 3 pounds boneless Chicken Thighs
  • 1 small package of Baby Carrots
  • 8 ounces Mushrooms
  • 1 bottle Dry Red Wine
  • 1 packet Onion Soup mix
  • 1 1/2 cups White Onions (I used frozen)

Step 1:

Brown the chicken in a skillet at high heat.

Step 2:

Put the chicken in the slow cooker. Add the carrots, onions, mushrooms, and onion soup. Pour the wine over.

Step 3:

Turn the slow cooker on low and cook for 5-6 hours.

  • I wish I had seen this yesterday so I could have it waiting for me tonight! Looks so good.

    • I have become obsessed with slow cooker meals. I try to make them on Sundays – and then I eat them on Monday and Tuesday. It makes the beginning of the week a bit easier. It is also pretty easy to turn slow cooker leftovers into new meals, so it isn’t too repetitive.
