Potato Soup

What do you do when you have several pounds of leftover mashed potatoes? My friend the Windy City Epicurean suggested that I make potato soup. Even though I love potatoes and soup, I had never made potato soup before. This soup is incredibly easy to prepare. The mashed potatoes dissolved into the turkey stock, thickening it. I also added diced potatoes to add some texture to the soup.

You could add pureed broccoli or leeks to this soup, or even some leftover turkey.

Potato Soup made with Mashed Potatoes

You will need:
3 cups Turkey Stock
3 cups Mashed Potatoes
1 1/2 cups diced Potatoes

Step 1:
Heat the stock in a large pot over medium heat until it comes to a boil.

Step 2:
Slowly whisk the potato into the stock 1/2 cup at a time.

Step 3:
Once all of the mashed potato has been whisked into the soup, add the diced potato. Cook for 15 minutes, or until the potatoes are soft. Serve warm.
