Paleo Strawberry Scones

I love a good scone, they are my favorite food item to order at Starbucks. My Dad however, thinks scones are dry and boring. My Dad also thinks that Martha Stewart makes scones on every episode of her show. That is an entirely different issue though. I was inspired by my recent purchase of almond flour and became determined to make scones. Scones are very British, so of course my husband loved these scones.

I decided to make Paleo Strawberry Scones because I thought that the strawberry would help to sweeten up these sugar free scones. The fruit was a very nice addition, and I think they prevented the scones from being too dry. The almond flour does make these scones a little more dense than scones made with traditional flour. Next time I will probably add more honey to make the scones more sweet and more moist.

Strawberry Paleo Scones

Total time: 20 minutes

Yield: 6 scones
You will need:
1 cup Almond Flour
a dash of Salt
1/2 teaspoon Baking Soda
1 Egg
1 1/2 tablespoons Honey
1/2 teaspoons Vanilla
1/2 cup chopped Strawberries

*I think this recipe would be just as good with Blueberries

Step 1:
Heat oven to 350 degrees. Then combine the dry ingredients in a bowl. Then in another bowl combine all the egg, honey, and vanilla. Whisk wet ingredients together.

Step 2:
Add the dry ingredients to the wet ingredients and stir together. Then fold in the strawberries.

Step 3:
Line a baking sheet with parchment paper.

Step 4:
Use your hands to form the dough into a ball. Then flatten the ball into a 2 inch, flat, circle. Cut into 6 equally sized, pizza-shaped pieces.

Step 5:
Use a spatula to transfer each scone to the parchment paper. Bake scones for 12-15 minutes. Serve warm.

*Please note, these scones did not keep very well. I suggest eating them all the day you make them.

Regular scones have a lot of butter, and cream or buttermilk. Rather than more honey I'd add coconut oil or milk, maybe both!
