Ketchipotle Bison Chili

The chilly fall weather, the colorful leaves, and the football on tv inspired me to make chili for the first time this fall. There is something wonderful about the scent of chili simmering on the stove. If you haven’t tried bison yet, you should. It is similar to beef, but it is a leaner meat. Ground bison is a great substitute for ground beef if you want to make your meal a little healthier.

This chili is simple to prepare, and can easily be made in large batches. What makes this chili extra special is the Ketchipotle ketchup that I added. It is a thick, smokey, spicy ketchup and it adds a nice flavor to the chili. The Ketchipotle also helps to thicken the chili, so you don’t have to simmer the chili for very long for it to thicken up. You can swap ingredients in this recipe to add your favorite peppers and beans. I used my personal favorite chili ingredients: bell pepper, poblano pepper, black beans, kidney beans, and onion. If you want to up the level of spice you can add jalapeños or habaneros.

I have been keeping it simple with the toppings and just adding a bit of cheddar, but sour cream and avocado are also fun chili toppings.

Want to turn this chili into an appetizer? Pour it into a serving dish or pie pan, generously top with cheese bake until the cheese browns, and serve with tortilla chips.

Serves: 6
Total time: 1 1/2 hours

You will need:
1 small Onion
1 tablespoon Olive Oil
1 1/2 lb of Ground Bison
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 1/2 Ketchipotle
1 Bell Pepper, diced
1 Poblano Pepper, diced
1 can Red Gold Diced Tomatoes
1 can Black Beans, drained and rinsed
1 can Kidney Beans, drained and rinsed
1 1/2 teaspoon Cayenne Pepper
1 1/2 teaspoon Chili

Step 1:
Chop the onion. Then heat the olive oil in a soup pot, and add the chopped onion. Saute the onions until they start to become translucent. Then add the bison, salt, and pepper.

Step 2:
Once the bison has browned, add all the remaining ingredients. Stir and let simmer for at least an hour. Taste the chili and add more salt, pepper, and spices to taste.
