Fun Fall Snacks with The Laughing Cow Cheese

When I started working from home, I started snacking constantly. And as a food blogger, I am always trying to find fun new ways to mix up my snack game. When I attended an event hosted by The Laughing Cow® recently, the goodie bags were filled with wheels of cheese. And you know how I love cheese. The theme of the event was “Reinvent Snacking” and I was inspired to create my own snacks using the cheese.

I tackled the task of reinventing snacking by using three different varieties The Laughing Cow Cheese Wedges to make three very different snacks:

Cheddar, Apple, and Cranberry

First I combing Red Delicious Apples, White Cheddar, and Dried Cranberries. I simply sliced an apple into thin but sturdy slices, spread it with The Laughing Cow Creamy White Cheddar, and sprinkled dried cranberries on top. The crisp apples, smooth slightly sharp cheese, and the sweet cranberries were a perfect pairing.

Turkey, Pretzel, Mustard, and Pepper Jack

Next up – Pretzels Spread with Spicy Pepper Jack and Sliced Turkey topped with Whole Grain Mustard. To make this snack, start by spreading The Laughing Cow Creamy Spicy Pepper Jack over square pretzel “snaps”, top with sliced turkey, and squeeze a bit of whole grain mustard on top. It’s like a mini bite sized turkey sandwich!

Sweet Potato, Swiss, and Maple Walnut

My third snack creation is a little more involved, but worth the extra effort – Baked Sweet Potato Rounds spread with Swiss Garlic & Herb and sprinkled with Maple Glazed Walnuts. Slice sweet potatoes into 1-inch thick rounds, drizzle with olive oil, place on a baking sheet, and bake at 350 degrees for 40 minutes, flipping the potatoes after 20 minutes. Once the potatoes have baked, remove them from the oven and prepare the walnuts. Heat 1 tablespoon of maple syrup in a small saucepan over medium heat, add 2 tablespoons of chopped walnuts, and let simmer for 1 minute. Then spread the potatoes with The Laughing Cow Creamy Swiss Garlic & Herb, and sprinkle the walnuts over. Serve warm. This would be a great easy appetizer to serve on Thanksgiving!

The fun thing about The Laughing Cow Cheese Wedges is that they are soft and spreadable, and even though they look small, they go a long way. I used just one wedge of each cheese to make each different snack!
