Beef and Goat Cheese Bolognese

Tomato season is coming to a close, and my home seems to be filled with them. No, we don’t garden, but apparently we can’t resist picking up gloriously fresh tomatoes at the grocery stores and farmers markets. This then lead to the dilemma of what to do with all of these tomatoes. I decided to make a very simple tomato sauce with beef and goat cheese. The goat cheese adds a creaminess and lightens up the dish a bit. This is the perfect weeknight meal. Making sauce is a lovely ritual. You chop the tomatoes, while drinking a glass of wine and chatting about your day. Then as the pot of sauce simmers, you can snack on a bit of cheese and crackers. This is the type of meal that is easy to prepare, but it requires enough patience to slow me down from the constant rushing.

My husband loved this beef and goat cheese bolognese so much that he was eating it by the spoonful. It is simple enough that the ingredients don’t overwhelm each other. You could adjust the proportions of the tomatoes and beef. I wanted a really thick beefy sauce, but if you wanted to tone down the meatiness, you could add more tomatoes or use half a pound of beef. I did add some crushed tomatoes which helped to thicken the sauce.

Serves: 4-6
Total Time: 1 hour

You will need:
1 lb Ground Sirloin
1 lb fresh Tomatoes
1 (15 ounce) can of Crushed Tomatoes (I used Red Gold)
3 ounces of Goat Cheese
1 lb Pasta
Salt
Pepper

Step 1:
Chop the tomatoes.

Step 2:
Heat a large pot over medium heat. Add the beef. Brown the beef while using a wooden spoon to break it up into small pieces. Season the beef with about 1/4 teaspoon of salt and pepper.

Step 3:
Once the beef has browned, add the chopped tomatoes. Let simmer and reduce over medium heat for about 30 minutes, stirring frequently.

Step 4:
Add the chopped tomatoes. Let simmer for about 5 minutes. The chopped tomatoes help to thicken the sauce.

Step 5:
Cook the pasta until al dente. Add the goat cheese to the sauce. Add more salt and pepper to taste.

Step 6:
Drain the pasta and serve it with a generous amount of sauce.
